Roasting technology of our company

 Slowly and carefully roasting, our roasters who experienced craftworkers do final check the roasted coffee beans by their eyes.
 
 

From seed to cup

 Roasting is the processing procedure of coffee beans, mainly focus on the control of fire and heat. The green(raw) beans do not have the aroma smell, neither taste good. The roasting is aimed to bring out the real smell and taste of the beans (bitter, acidity, and sweet).

Important point ① : freshness of roasted beans.
 
  Roasted beans shall be brewed within 2 weeks; it shall be kept under the condition of beans and shall be grounded just before brewing.

Important point ② : factor for fixing taste is roasting degree.
 
 The chlorogenic acid, it is one component of acid taste, begins to reduce when temperature reach to 180 degrees Celsius by heat decomposition, so acid taste is decreased more when the beans are roasted deeper.
